Cheetos Crusted Chicken

Marination:

  • Chicken 1-cut into 12 pieces
  • red chili flakes 1tsp
  • red chili powder 2 tsp
  • paprika powder 1 tsp
  • garlic minced 2 tbsp
  • black pepper powder 1 tsp
  • apple cider vinegar 4 tbs
  • mixed herbs 2 tsp
  • mustard sauce 1 tbsp or mustard powder 1 tbsp
  • Worcestershire sauce 4 tbs

Marinate the chicken overnight or for a couple of hours in the spices so the chicken gets infused with the flavors.

Coating:

  • flour 3/4 cup cup+salt and pepper to taste
  • cheetos chips crushed in food processor 2 cups
  • bread crumbs 1 cup
  • eggs 3

Mix the cheetos and breadcrumbs together and set aside. Season the flour and set aside. Beat the eggs. Then take each piece of the marinated chicken and coat it with the dry rub (flour) then dip in egg and finally with the cheetos mix, double coat if you wish to deep fry the chicken instead of baking it. I baked it in the stove oven to maintain the color of the cheetos and to cut down the calories a bit. Anyway, after coating place each chicken on a greased baking tray or a greased pan, drizzle olive oil on top and bake in the stove oven for around 45 minutes.

Serve with spicy sriracha sauce drizzled over the chicken, some light hawaiian salad and white boiled rice!
