Vegetable Cashew Nuts Gravy

  • Cashew nuts 1/2-1 cup
  • Green chilies 7-8, julienne
  • Cabbage 1 cup diced
  • Carrots 1/2 cup sliced (if using)
  • Capsicum 1/2 cup diced
  • Chicken cube 1
  • Salt and pepper to taste
  • Corn flour 4tbs
  • Water 4cups
  • Soya sauce 5tbs
  • Sugar 1tbs
  • Salt and pepper to taste
  • Chinese salt 1 tbs
  • Chili sauce 2-3tbs
  1. Roasted cashew nuts in a pan with a teaspoon of oil, then take out and set aside.
  2. Add a tbs of oil in the same pan and saute green chilies till they are colored.
  3. Take out and set aside.
  4. In the same pan saute cabbage, carrots and capsicum with a chicken cube, take out and set aside.

  1. 5. Add water to the very pan and corn flour dissolved in water along with soya sauce, sugar, Chinese salt, chili sauce salt and pepper. Cook till thickens then add in all the sauted veggies and the nuts. Boil for a minute, adjust spices and turn off heat. Ready to serve with some fried rice and spring rolls!
