Schezwan Pomfret

  • Pomfret 1
  • salt to taste
  • schezwan sauce 2 tbs
  • vinegar 1 tbs
  • red chili flakes 1 tsp
  • coriander powder 1 tsp

Put deep cuts on the pomfret and marinate with the above ingredients and let it rest for an hour.

Grill the fish on a hot grill pan 5 minutes on each side or till the fish is done. take off the pan and grill a cubed onion and capsicum and a whole tomato on the pan till slightly charred.

Sauce:

  • schezwan sauce 4 tbs
  • Tomato ketchup 2tbs
  • Oyster sauce 2tbs
  • Fish sauce 42tbs
  • Wooster sauce 2tbs
  • Soya sauce 2tbs
  • Salt to taste
  • Sugar 1tbs
  • Red chili flakes 1 tsp
  • Garlic cloves 1 finely chopped
  • Oil 1tbs
  • Whole Kashmiri red chilies 2

Mix the above ingredients in a sauce pan and bring to a simmer, then cook on medium heat for ten minutes. Pour hot over the pomfret and top with fried green chilies or green onions and serve with a side of boiled rice.
