Dynamite Prawns

For marinating Prawns:

  • prawns 1/2 kg
  • Salt and pepper to taste
  • Sriracha 1 tbs
  • Worcestershire sauce 2 tbs
  • Soya sauce 2 tbs

Marinate the prawns in the above ingredients for at least 3 hours.

For frying:

  • salt and pepper to taste
  • flour 6tbs
  • cornflour 3tbs
  • eggs 2

Mix the above to form a batter till you reach a thick smooth consistency. Coat each prawn and fry in hot oil till golden brown. take out of oil and place on a paper towel to remove excess oil.

For sauce:

  • mayonnaise 1/2 cup
  • salt a pinch
  • sriracha 3 tbs or more if you like it spicy
  • sugar 1 tbs
  • garlic paste 1 tsp
  • vinegar 2 tbs
  • ketchup 1 tbs

Whip up the sauce and top off the fried prawns, sprinkle some spring onions on top and serve immediately with Arabian rice or egg fried rice.
