Baked Peri bites

  • green chilies 8 big
  • cheddar cheese 150gm
  • milk 150ml
  • mayonnaise 6 tbs
  • salt to taste
  • chicken pieces (cooked or boiled and seasoned with peri peri sauce and salt)
  • bread crumbs 1 cup
  1. Deseed the green chilies and halve from the middle and arrange on a greased baking tray. If the chilies are too spicy then sprinkle salt over them along with white vinegar and set aside for 15 minutes. Rinse and use.
  2. Meanwhile make the cheese sauce by boiling the milk and adding cheddar too it, mixing on medium low heat till cheese melts
  3. Once the cheese mixture cools down add in the mayonnaise. DO NOT ADD MAYO IN HOT MIXTURE OR IT WILL CURDLE. Add in a pinch of salt and set aside.
  4. Place a piece of chicken in each chili boat and top with cheese sauce. Sprinkle a lot of bread crumbs on top and bake in the oven till golden brown. i used my grilling option in my microwave and it turned out crispy from the outside filled with gooey cheese sauce. No oil at all and TO DIE FOR. ❤
