Singaporean Rice

Chicken gravy:

Chicken 3/4 kilo, cut in 1inch cubes
Tomato paste 1/2cup
Soya sauce 4-6tbs
Chili sauce 3tbs
Sugar 4tbs
Salt to taste
Red chili flakes 2tspn or to taste
Black pepper 1tspn
Tumeric half tsp
Chinese salt 1tbs
Garlic paste 2tbs
All purpose flour or corn flour 2-3 tbs
Red Chili paste (boil three whole red chilies and puree them)
Chicken cube 1

Saute garlic in 3tbs oil, and add in chicken, and salt, pepper and red chili flakes and half tspn tumeric. Cover and cook on medium to low flame till chicken cooks in its own water.
When water has dried add chili paste, chicken cube, sugar, soya sauce, chili sauce, and enough water that chicken is 3/4th dipped in water or add tomato paste and around 3 glasses of water.
Add Chinese salt, let the gravy boil, then check if there is enough water. If the sauce is really thick, add some more water and adjust the spices by adding sugar, salt, pepper, soya sauce and red chilies.

Dissolve all purpose flour or corn flour in some water and add to it and turn flame on high and cook till it is thick while stirring continuously.
Chicken is ready. Put it aside.

 

 

Vegetables:

Capsicum 4 medium sized , cut into thin strips
Carrots 3, cut into thin strips
Cabbage one small, cut into strips
Black pepper 1 tsp
Salt to taste
Chinese salt 1tbs
Put all the vegetables in a pan and add two tbs of oil and all spices and stir fry till vegetables get a slight color on them. Turn off heat and put aside.

Rice and spaghetti:

Rice 2glasses
Spaghetti or egg noodles 350 grams
Boil rice and put aside.
Boil spaghetti and rinse with cold water till cold so that it doesn’t stick and set aside.

Mayo sauce:

Mayonnaise 1 cup
Ketchup or chili garlic sauce 3/4th cup
Chili sauce 3-4tbs
Mustard powder 1teaspoon (if using)
Salt, A pinch
Sugar, 1-2 tbspoon
Milk 1/4cup
Chili flakes 1/2tsp
Garlic paste 1 tsp

Mix all these things in a bowl and sauce is ready. Add more milk if it is too thick. And more chili sauce or chili flakes if not spicy enough.

Toppings:

  • -Fried green chillies: cut the green chilies in half, lengthwise and take out all seeds and deep fry in very hot oil till brown.
  • -Fried garlic: peel garlic and cut into thin strips and fry in hot oil till golden brown and dry on tissues to absorb excess oil and get crisp.
  • -Nimco: any mixed nimco
  • -Almonds: cut into little pieces

 

 

LAYER:

Put a layer of boiled rice in a bowl, top with veggies, then chicken gravy, then spaghetti or egg noodles, and in the end mayo sauce and fried green chilies and fried garlic and almonds and nimco.
