Stuffed Chicken with Honey Soy Glaze

CHICKEN MARINATION:

Whole chicken 1, skinless

Salt 2tsp
Black Pepper 1tsp
Red chili flakes 2-3tsp
garlic paste 2tbs
Ginger paste 2tbs
Lemon juice 5-6 tbs
Vinegar 3tbs
Cornflour for dusting

Wash chicken nicely and submerge it in water and add 1/4 cup vinegar in it and let it stay for a fifteen minutes, this helps chicken get tender in lesser time.
Prick chicken with a bamboo stick and marinate chicken in all the spices, (I let mine rest in the marination for two days)
STUFFING:
Onions 1/2 cup chopped
Mushrooms 5, chopped
Corn 1/2 tin
Coriander leaves 3 tbs
Salt and pepper
Red chili powder 1 tsp
Lemon juice 1 tbs
Mix all in a bowl and stuff the chicken and secure with toothpicks.

GLAZE:

Brown Sugar 1 cup or plain sugar 1/2 cup
Honey 1/4 cup
Soya sauce 1/4-1/2 cup
Garlic paste 2 tsp
Red chili flakes 1/2 tsp
Cumin powder 1 tbs
Salt to taste
Paprika powder 1/2 tsp

Mix all and gently heat on the stove for a few minutes till it boils.

 

 

 

 

Put chicken in a greased pan and add 1 cup of chicken stock, and dust with cornflour  and let it bake for 40-45 minutes on medium to low flame on the stove oven, along with basting the chicken with the juices. Then turn the heat to high till all liquid evaporates. Pour glaze and let it bake for another 15-20 minutes along with basting. Its ready to serve!
I served it with  Arabian Rice.
